roasted spices for a fuller flavour, this authentic recipe mix will take
your taste buds on an exciting and flavourful journey.This delightful
blend includes spicy crushed chillies combined with the warming flavour of
ground allspice, roasted coriander seeds, fragrant coriander leaf and
thyme.
Usage
JAMAICAN JERK CHICKEN
1 tbs olive oil
1 onion, chopped
4 boneless, skinless chicken breasts
1 packet Schwartz Flavourful Jamaican Jerk Chicken Recipe Mix
1 green pepper, diced
3 tbs tomato purée
75ml (3fl oz) water
425g tin pineapple chunks in natural juice
1. Heat the olive oil in a deep frying pan and fry the onion gently
for 1-2 minutes.
2. Add the chicken and cook for 2-3 minutes on each side.
3. Sprinkle in the packet contents, and then add the rest of the
ingredients, including the pineapple juice, but reserving the
pineapple chunks. Bring to the boil, stirring.
4. Cover the pan, turn down the heat and simmer gently for 15
minutes, adding the pineapple chunks for the last 5 minutes.
5. Try with diced chicken or for a change try adding
sliced pork fillet. If you fancy adding prawns, remember to add cooked
prawns at the same time as the pineapple chunks rather than at the
beginning of cooking.
VEGETARIAN
SUGGESTIONS:Simply replace the chicken breasts with Quorn meat-free
chicken-style steaks or strips, or similar meat-free product.
Jamaican Jerk Sweet Potato & Butternut Squash - try
replacing the chicken with a tin of drained chickpeas and a
combination of diced sweet potato and butternut squash. Follow the
instructions above but increase the water to 125ml (4fl oz) and
increase the cooking time to 25 minutes, or until the potatoes and
squash are cooked through and tender.
SLOW COOKER INSTRUCTIONS
Place all the ingredients in the slow cooker. Mix together well.
Cook according to your slow cooker instructions.
We cooked it on a low setting for 5 hours, but please refer to the
manufacturer's instructions for best results.
SUITABLE FOR FREEZING
This finished
recipe is suitable for freezing. Transfer the cooked recipe to an airtight
container and leave to cool. Cover and place in the freezer for up to 1
month, for best results.
- Defrost
thoroughly overnight in a refrigerator. Transfer to a saucepan and heat
gently over a medium-heat, stirring occasionally, until piping hot
throughout. Alternatively, place in a microwaveable bowl, cover loosely
with cling film and re-heat in the microwave on HIGH for 4-5 minutes,
stirring half-way through, or until piping hot throughout.
