Blended to perfection, using whole and slowly roasted spices for a fuller flavour, this authentic recipe mix will take your taste buds on an exciting and flavourful journey.This exciting blend, including the sweet, woody flavour of cinnamon and the warming aromatic flavours of cardamom and roasted cumin seeds, combined with the delicious bite of roasted ginger pieces, is ideal for Indian-style cooking.

Usage

CHICKEN BIRYANI

2 tbs oil or 50g (2oz) butter

1 onion, sliced

450g (1lb) boneless, skinless chicken breasts, sliced

1 packet Schwartz Flavourful Indian Chicken Biryani Recipe Mix

400g tin chopped tomatoes

150ml (¼ pint) water

175g (6oz) basmati rice, rinsed

100g (4oz) frozen peas

1. Heat the oil or butter in a deep frying pan and gently fry the onion for 3-4 minutes.

2. Add the chicken and sprinkle in the packet contents. Cook over a medium heat for 7-8 minutes, or until the chicken is browned.

3. Stir in the rest of the ingredients and bring to the boil.

4. Cover the pan and cook on a medium heat for 14-15 minutes, or until the rice is al dente and the liquid has been absorbed. Give the rice a quick stir occasionally whilst cooking, but remember to replace the lid.

Try replacing the chicken with sliced lamb leg steak or prawns. If using prawns, add cooked prawns for the last 5 minutes of cooking time instead of at the beginning. Don't worry if you haven't got any basmati rice, long grain rice works just as well.

VEGETARIAN SUGGESTIONS:Simply replace the chicken breasts with Quorn meat-free chicken-style strips, or similar meat-free product.Vegetable Biryani - Try replacing the chicken with a selection of aubergines, mushrooms and peppers. Simply add the diced vegetables instead of the chicken, but only cook for 3-4 minutes. Then follow the remaining cooking instructions for a delicious Vegetable Biryani.

SUITABLE FOR FREEZING

This finished recipe is suitable for freezing. Transfer the cooked recipe to an airtight container and leave to cool. Cover and place in the freezer for up to 1 month, for best results.

Re-heating Guidlines - Defrost thoroughly overnight in a refrigerator. Transfer to a saucepan and heat gently over a medium-heat, stirring occasionally, until piping hot throughout. Alternatively, place in a microwaveable bowl, cover loosely with cling film and re-heat in the microwave on HIGH for 4-5 minutes, stirring half-way through, or until piping hot throughout.
