A medium-heat fragrant and aromatic Indian-style
blend including the sweet, citrus flavour of cardamom and the warming
flavours of ginger and nutmeg.
Usage
For a warming Rogan josh just add:
1 tbs oil1 onion, finely chopped (or for best results blend in a food
processor)
450g (1lb) lamb shoulder, diced
400g tin chopped tomatoes
75ml (3fl oz) water
1 red pepper, diced
1 tbs Greek yoghurt (optional)
1. Heat the oil in a large frying pan over a medium heat, add the
onion and fry for 10 minutes, constantly stirring until it begins to
turn golden brown.
2. Combine the lamb with the packet contents in a bowl so that it is
coated in the mixture, then add to the pan and brown for 3-4
minutes.
3. Add the tomatoes, water and pepper and combine. Cover and cook on
a low heat for 40 minutes.
4. Stir in the yoghurt and serve.
SUITABLE FOR FREEZING
This finished
recipe is suitable for freezing. Transfer the cooked recipe to an airtight
container and leave to cool. Cover and place in the freezer for up to 1
month, for best results.
Re-heating Guidlines - Defrost
thoroughly overnight in a refrigerator. Transfer to a saucepan and heat
gently over a medium-heat, stirring occasionally, until piping hot
throughout. Alternatively, place in a microwaveable bowl, cover loosely
with cling film and re-heat in the microwave on HIGH for 4-5 minutes,
stirring half-way through, or until piping hot throughout.
