A classic French-style blend for ratatouille
including basil and oregano
Usage
RATATOUILLE
1 red onion
675g (1½lb) vegetables (aubergine, courgette, red and
yellow peppers)
2 tbs olive oil
400g tin chopped tomatoes
275ml (9fl oz) water
1 tbs tomato purée
Easy to prepare in 10 mins
cook in 35 mins
1. Cut the onion and vegetables into 2.5cm
(1”) chunks.
2. Heat the oil in a large pan over a high heat,
add the onion and fry for 3-4 minutes until softened. Add the
vegetables and fry for a further 5 minutes, stirring.
3. Stir in the sachet contents, tomatoes, water
and tomato purée. Bring to the boil, reduce the heat, cover
and simmer gently for 25 minutes.
