Bombay Potatoes

Usage

For OUR RECIPE you will need …

1 sachet Schwartz Bombay Potatoes Recipe Mix
450g (1lb) potatoes, peeled and diced
2 tbs oil
1 onion, diced
4 tbs water
400g tin chopped tomatoes

Directions …

1. Par-boil potatoes in water for 10 minutes. Drain and set aside.

2. Meanwhile, heat oil and brown onion for 3-4 minutes.  Add sachet contents and cook gently for 1 minute, stirring. 

3. Add potatoes, water and tomatoes, stir thoroughly.  Cover and simmer for a further 10 minutes or until potatoes are cooked.

4. Serve with naan bread and mango chutney.

Hints & Tips …

Why not try stirring in some fresh spinach for the last 5 minutes.

Additional Usage

Microwave directions for 800W: Place onion and oil in a microwaveable dish.  Cover and cook on full power for 5 minutes.  Stir in potatoes, water, tomatoes and sachet contents.  Cover and cook on full power for 20-25 minutes or until potatoes are cooked, stirring half-way through.

Storage Instructions

Freezing Guidelines

This finished recipe is suitable for freezing.  Transfer the cooked recipe to a dry clean container, leave to cool prior to sealing.  Place in the freezer for up to 1 month, for best results.

Re-heating Guidelines

Defrost thoroughly overnight in a refrigerator.  Transfer to a saucepan and heat gently over a medium-heat, stirring occasionally, until piping hot throughout.  Alternatively, place in a microwaveable bowl, cover loosely with cling film and re-heat in the microwave (800W) on full power for 6 minutes, stirring half-way through, or until piping hot throughout.
