apricot for Moroccan Lamb Casserole.
Usage
MOROCCAN LAMB
CASSEROLE
1 tbs olive oil
1 onion, sliced
450g (1lb) lamb, diced
1 packet Schwartz Moroccan Lamb Casserole Recipe Mix
300ml (½ pint) water
200g tin chopped tomatoes
50g (2oz) dried apricots and/or sultanas
25g (1oz) flaked almonds (optional)
1. Pre-heat the oven to 180°C, 350°F, Gas Mark

2. Heat the oil and fry the onion for 3-4 minutes in a frying pan,
until softened. Add the lamb and cook for 4-5 minutes.
3. Transfer to a casserole dish. Blend the packet contents with the
water and add to the dish with the remaining ingredients.
4. Stir thoroughly, cover and cook for 1½ hours, or until
the meat is tender.
5. Serve with couscous
For quick and easy Moroccan Chicken, try replacing the
lamb with sliced chicken breasts. Heat the oil and fry the onion and
chicken until browned. Blend the packet contents into the water and add to
the pan with the remaining ingredients. Bring to the boil and simmer for
10-15 minutes, until the sauce has thickened and the chicken is cooked.
Great served with baby new potatoes.
SLOW COOKER
INSTRUCTIONS
Place the onion, diced lamb, tinned
tomatoes and apricots (and/or sultanas) in the slow cooker. Blend the
packet contents with the water and stir into the rest of the ingredients.
Cook according to your slow cooker instructions.
We cooked it on a low
setting for 5 hours, but please refer to the manufacturer's instructions
for best results. We recommend using lean lamb or frying off the meat and
draining excess fat before cooking.
SUITABLE FOR
FREEZING
This finished recipe is suitable for freezing.
Transfer the cooked recipe to an airtight container and leave to cool.
Cover and place in the freezer for up to 1 month, for best
results.
Re-heating Guidlines - Defrost thoroughly
overnight in a refrigerator. Transfer to a saucepan and heat gently over a
medium-heat, stirring occasionally, until piping hot throughout.
Alternatively, place in a microwaveable bowl, cover loosely with cling
film and re-heat in the microwave on HIGH for 4-5 minutes, stirring
half-way through, or until piping hot throughout.
