COQ AU VIN

1 tbs olive oil

1 onion, sliced

175g (6oz) lean bacon, sliced

450g (1 lb) chicken portions, skinned

1 packet Schwartz Coq au Vin Recipe Mix

300ml (½ pint) water

125g (5oz) baby button mushrooms

1. Pre-heat the oven to 190°C, 375°F, Gas Mark 5.

2. Heat the oil and fry the onion and bacon for 3-4 minutes, in a frying pan, until browned. Add the chicken and fry for a further 3-4 minutes, turning occasionally. Drain excess liquid.

3. Transfer to a casserole dish. Blend the packet contents with the water and add to the dish with the mushrooms.

4. Stir thoroughly, cover and cook for 1 hour, or until the chicken is cooked.

5. Serve with crispy roast potatoes.

This dish works equally well with chicken breasts, thighs or drumsticks. Try using pancetta for a change or using peeled shallots instead of sliced onions.
