Curried Chicken & Avocado Sandwich recipe

Ingredients
Mildly spiced diced chicken, combined with avocado and dried cranberries in a light mayonnaise, served in delicious wholemeal bread.
Method
Step 1
Mix the mayonnaise, Curry Powder and Crushed Chillies in a large bowl, until well blended.
Step 2
Add the avocado, cranberries, chicken and Coriander Leaf, toss gently to mix.
Step 3
Divide the chicken mixture evenly among 4 slices of the bread. Top with the lettuce leaves and remaining slices of bread.
Step 4
Serve immediately.
