Slow Cooker Chicken Curry recipe

Ingredients

  • 1 onion, cut into chunks
  • 1 red pepper, cut into chunks
  • 450 g (1 lb) potatoes, cut into chunks
  • 450 g (1 lb) chicken, diced
  • 1 sachet Schwartz Slow Cookers Chicken Curry
  • 400 g tin chopped tomatoes
  • 175 g (6 oz) fresh spinach

Delicious and aromatic slow-cooked chicken in a medium-heat curry sauce blend combining ground coriander and cumin.

Method

Step 1

Place the onion, pepper, potatoes and chicken into your slow cooker pot.

Step 2

Blend the sachet contents with the chopped tomatoes, and add to the slow cooker pot. Stir through.

Step 3

Cover and cook for 4 hours on HIGH or 8 hours on LOW, or until the meat is tender and cooked through. (Keep covered during cooking. Cooking times vary between slow cooker models.)

Step 4

Remove the lid, stir the spinach through and stand for 5 minutes before serving.

Step 5

Delicious served with rice and mango chutney.

Cook's Notes

Why not try replacing the diced chicken with skinless chicken thighs or diced lamb.  If you have time, try browning off the meat in a frying pan before adding to the slow cooker.
