Serves 300ml (1/2 pint)
Real Vanilla Custard
- 300ml (1/2 pint) milk
- 1/2 Schwartz Vanilla Pod , split and seeds reserved
- 3 medium egg yolks
- 1 tbs caster sugar
- 1 tsp cornflour
STEP 1Place the milk, Vanilla Pod and seeds in a large saucepan and heat gently, bringing slowly to the boil.
STEP 2Meanwhile blend the egg yolks, caster sugar and cornflour together in a large bowl. Strain the hot milk onto the egg mixture stirring continuously.
STEP 3Rinse out the saucepan and pour in the custard mixture. Heat very gently, stirring continuously, until the sauce thickens. This should only take a minute or two. Serve hot or cold removing the Vanilla Pod just before serving.
