Cod with a Parsley and Lemon Crust
- 50g (2oz) butter
- 1 small onion, finely chopped
- 4 tsp Schwartz Parsley Flat Leaf
- 75g (3oz) fresh breadcrumbs
- Zest and juice of 1 lemon
- Salt and pepper to taste
- 450g (1lb) cod fillet
STEP 1Prre-heat the oven to 180°C, 350°F, Gas Mark 4.
STEP 2Melt the butter in a frying pan and fry the onion and Parsley for 3-4 minutes. Stir in the breadcrumbs, lemon zest and juice and fry for 2-3 minutes. Season to taste.
STEP 3Divide the fish into 4 portions and place on a baking sheet. Divide the breadcrumb mixture into 4 and use to top the fish. Bake for 20-25 minutes.
