Smoked Salmon with Vegetable Ribbons dressed with a dill vinaigrette.
- 2 carrots
- 2 courgettes
- 150g (6oz) smoked salmon, cut into strips
- For the dressing:
- 4 tbs olive oil
- 2 tbs white wine vinegar
- 2 tsp wholegrain mustard
- 1/2 tsp Schwartz Dill
- 2 tsp honey
- Salt and Schwartz Ground Black Pepper
STEP 1Using a vegetable peeler, slice the carrot and courgette into ribbons. Place in a bowl with the salmon.
STEP 2Mix all the dressing ingredients together and stir into the salmon. Cover and marinate for 30 minutes.
STEP 3Serve with melba toast.
