Smoked Salmon with Vegetable Ribbons dressed with a dill vinaigrette.

Ingredients

  • 2 carrots
  • 2 courgettes
  • 150g (6oz) smoked salmon, cut into strips
  • For the dressing:
  • 4 tbs olive oil
  • 2 tbs white wine vinegar
  • 2 tsp wholegrain mustard
  • 1/2 tsp Schwartz Dill
  • 2 tsp honey
  • Salt and Schwartz Ground Black Pepper

Method

STEP 1Using a vegetable peeler, slice the carrot and courgette into ribbons. Place in a bowl with the salmon.

STEP 2Mix all the dressing ingredients together and stir into the salmon. Cover and marinate for 30 minutes.

STEP 3Serve with melba toast.
