450 gram (1 pound) pork fillet
1 tablespoons oil
1 courgette, cut into batons
½ bunch spring onions, sliced lengthways
275 gram (10 ounce) noodles, cooked according to pack instructions
Soy sauce to serve
2 carrots, cut into batons
