Sausage & Bean Casserole recipe

Ingredients

A mouth-watering, slow-cooked casserole combining sausages, beans and tomatoes with a blend of red bell peppers, oregano and basil, sure to become a family favourite.

Method

Step 1

Brown the sausages in a frying pan, drain excess oil.

Step 2

Place the browned sausages, onion and beans in the slow cooker pot.

Step 3

Blend the sachet contents with the chopped tomatoes, water and tomato purée, and add to the slow cooker pot. Stir through.

Step 4

Cover and cook for 4 hours on HIGH or 8 hours on LOW. (Keep covered during cooking. Cooking times vary between slow cooker models.)

Step 5

Remove the lid, stir through and stand for 5 minutes before serving.

Step 6

Delicious served with mashed potatoes and fresh vegetables.

Why not try using butter beans or kidney beans, or replacing the sausages with diced pork?
