Welcome to the Schwartz glossary, an A to Z guide to cookery terms. Whether it's herbs and spices, names of dishes or cooking techniques, you'll find them here, along with suggested recipes and links to more information.

  • Vermicelli
    • A variety of pasta that means little worms and is a very fine form of spaghetti. Also used to refer to sweet sugar strands for cake decorating.
  • Veronique
    • Traditional French recipe meaning cooked in white wine and garnished with grapes. Recipes usually include chicken, fish and game.
  • Vinegar
    • A traditional condiment made by acetic fermentation, a process that essentially converts alcohol into acid. (See White Wine Vinegar, Red Wine Vinegar, Cider Vinegar, Balsamic Vinegar, Malt Vinegar)
