1 sachet Schwartz Mediterranean Roasted Vegetables Recipe Mix
675g (1½lbs) mixed vegetables (courgettes, red and yellow peppers, onions and aubergines)
2 tbs olive oil
1. Pre-heat the oven to 220°C, 425°F, Gas Mark 7 (or pre-heat the grill to a medium heat).
2. Cut vegetables into 2.5cm (1”) chunks, place into a bowl and coat with oil. Sprinkle over sachet contents and toss to coat evenly.
3.Spread vegetables onto large baking tray and cook for 30-35 minutes, or until cooked through.
4. Serve as an accompaniment to chicken, steak, pork or lamb.
Try stirring the cooked vegetables into cooked pasta or couscous with your favourite salad dressing. Why not try topping ready made puff pastry with the cooked vegetables before baking in the oven for a delicious vegetable tart.
