A rustic Spanish, tomato and chicken dish with Oregano, Smoked Paprika and Thyme.
STEP 1Heat the olive oil and fry the chicken and bacon for 7-8 minutes until browned.
STEP 2Toss in the pepper and add the Smoked Paprika, Minced Garlic, Oregano, Thyme and Fennel Seeds. Cook for a further minute.
STEP 3Add the tomato purée, water and tomatoes. Simmer for 15 minutes, or until the sauce has thickened. Season to taste.
STEP 4Serve with rice.
