Cod with a Parsley and Lemon Crust

  • Prre-heat the oven to 180°C, 350°F, Gas Mark 4.

  • Melt the butter in a frying pan and fry the onion and Parsley for 3-4 minutes. Stir in the breadcrumbs, lemon zest and juice and fry for 2-3 minutes. Season to taste.

  • Divide the fish into 4 portions and place on a baking sheet. Divide the breadcrumb mixture into 4 and use to top the fish. Bake for 20-25 minutes.
