Pre-heat the grill to a medium-heat.
Mix the Garlic, Rosemary, Thyme, Sea Salt and Crushed Chillies in small bowl. Rub on both sides of the pork chops.
Grill for 3-4 minutes per side or until the pork is cooked through. Cover with foil to keep warm.
For the Peach Sauce, mix the the sugar, vinegar, sherry, cornflour and Cinnamon in a small saucepan. Bring to the boil over a low heat, simmer for 5 minutes. Add the peaches and simmer for a further 3 minutes.
Spoon the warm peach sauce over the pork chops and serve immediately.
