Meltingly tender belly of pork with a crispy skin, served with American style beans in a rich molasses sauce flavoured with Classic Barbecue Seasoning.
Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
Score across the skin of the pork belly with a sharp knife, season generously with Salt and Pepper and place in the oven for 35 – 40 minutes until the skin begins to puff up and crisp.
Meanwhile, combine all of the remaining ingredients in a shallow, ovenproof dish. Sit the pork on top then cover the bean mixture loosely with foil, leaving the pork uncovered to allow it to continue to crisp.
Reduce the oven temperature to 170°C, 325°F, Gas Mark 3 and cook for 1 hour 45 minutes. The pork should be tender and crispy on top. Divide the pork into 4 and serve with the beans.
