Sticky Rack of Ribs


  • 2 large racks of pork ribs
  • 2 Schwartz Bay Leaves
  • 1 onion, peeled and halved
  • 150 ml (¼ pint) tomato ketchup
  • 4 tsp Schwartz Classic BBQ
  • 2 tbs demerara sugar
  • 2 tbs light soy sauce
  • 2 tbs sweet sherry
  • Schwartz Sea Salt and Black Pepper to season

Alternatively cook on the BBQ, basting and turning frequently.


STEP 1: Pre-heat the oven to 180?C, 350?F, Gas Mark 4.

STEP 2: Place the ribs into a large roasting pan. Pour enough boiling water to cover and add the Bay Leaves and the onion. Cover with foil, carefully transfer to the oven and cook in the oven for 45 minutes.

STEP 3: Remove the ribs from the oven and increase the temperature to 200?C, 400?F, Gas Mark 6. Remove the racks from the pan, pat dry with kitchen towel, transfer to a new roasting tin. In a bowl combine the remaining ingredients together, then spoon over the ribs. Cook for 40-45 minutes basting and turning the ribs occasionally.
