Crisp tortilla sandwich crammed with cheese, spring onions, Chives and a hint of Chilli. A great recipe for a quick and easy lunch or snack.
STEP 1: In a bowl mix together the cheese, spring onions, Chillies and half the Chives.
STEP 2: Sandwich ½ the filling between two tortillas and then brush the top with ¼ of the butter. Repeat with the other two tortillas.
STEP 3: Heat a large non-stick frying pan and flip the tortilla into the pan on the buttered side and push down with your hand. Place a plate on top and cook for 3 minutes.
STEP 4: Remove the lid and brush the top of the tortilla with ½ of the remaining butter. Turn the tortilla in the pan and cook on the second side. Repeat for the other tortilla. Serve cut into wedges with Chives.
