Try this old favourite accompaniment to Christmas dinner, with a classic festive spice flavour.
Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Heat the butter in a large pan and gently fry the onion for 2-3 minutes. Finely chop the cabbage and add to the pan. Stir in the vinegar, Salt, Cinnamon, Nutmeg and Black Pepper. Continue to cook for 3-4 minutes, stirring frequently.
Add the apple and transfer to an ovenproof dish. Cover and cook in the oven for 1 hour or until the red cabbage is tender. Stir at the end of cooking and serve.
