- 2 tablespoons olive oil
- 2 onions, diced
- 2 teaspoons Schwartz® Garlic Granules
- 2 teaspoons Schwartz® Turmeric Powder
- 2 teaspoons Schwartz® Ground Cumin
- 2 teaspoons Schwartz® Garam Masala Powder
- 800 grams tinned chopped tomatoes
- 400 grams dried red lentils
- 400 mililitres full-fat coconut milk, well mixed
- 1 litre vegetable stock, preferably homemade or very low salt
- 1 tablespoon wholegrain mustard
- 1 small butternut squash, peeled and cubed
- 100 grams fresh spinach
- Schwartz® Sea Salt to taste
- Schwartz® Black Peppercorn Grinder to taste
- TO SERVE:
- Naan or chapati, to serve
- Small bunch coriander, roughly chopped

- Heat the oil in a large pan and add the onions. Cook for around 5-7 minutes over a low-medium heat, stirring occasionally, until the onions are starting to soften and turn translucent.
- Add the Garlic Granules, Turmeric, Cumin and Garam Masala. Stir well, and cook for a further 2 minutes until fragrant.
- Add the tinned tomatoes, lentils, coconut milk, stock, mustard and diced butternut squash, mix well and bring to the boil.
- Reduce the heat and simmer for 20-30 minutes or until the lentils are tender and the butternut squash has cooked.
- Stir through the spinach until wilted and season to taste with salt and pepper.
- Spoon into bowls, garnish with fresh coriander and serve with warm naan or chapati.
