A mild and fragrant Thai prawn curry flavoured with coconut and Coriander leaf.
STEP 1: Place the coconut milk, tomato purée, Thai 7 Spice, Coriander Leaf and lemon juice in a wok or large frying pan and bring to the boil, stirring continuously.
STEP 2: Add the beans and tomatoes and simmer for 4-5 minutes or until the beans are tender. Stir in the prawns and heat through for a further minute.
STEP 3: Serve with rice.
