Curried Vegetable Soup

Bring some brilliance to your bowl with this spicy twist on a classic country style soup.

  • Heat a small frying pan on a medium heat, add the mild curry powder and ginger. Warm through for 30 seconds so the spices begin to release their aromatics, then add the rustic country soup.

  • Heat through to a simmer and add the cream. / crème fraiche.

  • Carefully transfer to a blender and blend to a smooth soup. Season to taste with salt and pepper.

  • Serve the soup in warm bowls with a drizzle of olive oil.
