Bring some brilliance to your bowl with this spicy twist on a classic country style soup.
Heat a small frying pan on a medium heat, add the mild curry powder and ginger. Warm through for 30 seconds so the spices begin to release their aromatics, then add the rustic country soup.
Heat through to a simmer and add the cream. / crème fraiche.
Carefully transfer to a blender and blend to a smooth soup. Season to taste with salt and pepper.
Serve the soup in warm bowls with a drizzle of olive oil.
