Our hearty cauliflower cheese bake is perfect for bringing some oomph to the table with its rich Somerset cheddar and buttery cream sauce. Serve up with roast turkey or pigs-in-blankets for a warming festive side, or let the cauliflower cheese take the spotlight for a meat-free feast, served up with roasted carrots and Brussels sprouts.
  • 375 grams (13 ounces) cauliflower, cut into florets

  • 1 sachet Cheddar Cheese Sauce

  • 300 millilitres (1/2 pint) semi-skimmed milk

  • 25 grams (1 ounce) butter (optional)

  • 1 Place the cauliflower in a steamer and steam for 5-6 minutes, until tender but still al dente.
  • 2 Meanwhile, blend the packet contents with the milk and bring to the boil, stirring. Add the butter if using, and leave to simmer for 1 minute.
  • 3 Place the cauliflower in a large serving dish and pour over the Cheddar Cheese Sauce.
