Delicious Jersey Royal potatoes, red onion, red pepper and cherry tomatoes tossed in olive oil and Italian Herb Seasoning before roasting in the oven. A great accompaniment to meat, chicken or fish, or tossed with salad leaves for a tasty lunch.
  • 450 gram (1 pound) Jersey Royal potatoes, diced to 2.5cm (1 inch)

  • 1 red onion, cut into chunks

  • 1 red pepper, cut into chunks

  • 125 gram (5 ounce) cherry tomatoes

  • 2 tablespoons olive oil

  • 1 tablespoons Italian Herb Mix

  • 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
  • 2 Place all the vegetables on to a baking tray. Pour over the olive oil and sprinkle in the Italian Herb Seasoning. Toss together until the vegetables are evenly coated.
  • 3 Bake in the oven for 35-40 minutes or until the potatoes are cooked.
