450 gram (1 pound) new potatoes
1 red onion, chopped
1 tablespoons lime juice
1 tablespoons vegetable oil
2 teaspoon Ground Ginger
2 teaspoon Flat Leaf Parsley
Schwartz Sea Salt and Black Pepper to season
Boil the potatoes for 15-20 minutes or until cooked through. Drain and rinse well under cold water, until cool.
Slice the potatoes thickly and combine with the remaining ingredients. Season to taste.
Serve at room temperature.
