Chicken Noodle Soup
Ingredients
  • 1 litre good quality liquid chicken stock (or bone broth)

  • 500 millilitres (17 fluid ounce) water

  • 1 tablespoon sesame oil

  • 4 garlic cloves, finely grated

  • 1 thumb sized piece of ginger, finely grated

  • 1 chilli, finely chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey

  • 2 Whole Star Anise

  • 6 skinless chicken thighs, skinless and boneless

  • 3 pak choi, finely sliced (separated into stems and leaves)

  • 200 grams (7 ounces) rice noodles

  • 4 Spring onions, sliced

  • 2 fresh limes

  • Fresh coriander (optional)

  • 2 teaspoons tbsp crispy chilli oil (optional)
