Potato Cakes with Eggs & Bacon

Tasty potato cakes flavoured with Shallots and fried until golden brown, topped with fried bacon and eggs for a delicious breakfast or brunch.

  • STEP 1: Cook the potatoes in boiling, salted water until tender. Drain.

  • STEP 2: Add the Schwartz Freshlock Shallots, butter and cheese and mash well. Stir in the flour and season to taste. Divide into 4 flat rounds.

  • STEP 3: Heat the oil in a frying pan and fry the potato cakes for 2-3 minutes on each side until golden.

  • STEP 4: Fry the eggs and the bacon.
