Roasted Mediterranean Vegetables

Schwartz for Veg Mix for Mediterranean Roasted Vegetables gives vegetables a mouth-watering and delicious garlic and chargrill flavour. A great accompaniment to chicken, meat and fish, or simply stir through pasta for a quick and tasty vegetarian meal.

  • Pre-heat the oven to 220°C, 425°F, Gas Mark 7, or pre-heat the grill or BBQ to a medium-heat.

  • Cut vegetables into 2.5cm (1") chunks, place into a bowl and coat with oil. Sprinkle over sachet contents and toss to coat evenly.

  • Spread vegetables onto large baking tray and cook for 30-35 minutes, or until cooked through or place directly on the grill pan or BBQ for 15 minutes, turning occasionally.

  • Serve as an accompaniment to chicken, steak, pork or lamb.
