Sweet, earthy and deliciously creamy, parsnips are perfect at this time of year. No Christmas meal is complete without this mighty root vegetable, but why not add a surprise or two with an alternative take on the Yuletide staple? From versatile sides to showstopping mains, these parsnip recipes show you how to shine a spotlight on the unsung star of the festive table.

Curried Parsnip Soup

Warm those winter noses with a bowl of steaming curried parsnip soup. The humble parsnip may not be the first ingredient you think of when you want to pack a flavourful punch, but mixed with the perfect blend of coriander, ginger and cumin from our Medium Curry Powder, this little root really comes into its own. Serve this delightfully warming parsnip soup with a cool spoonful of greek yoghurt or sour cream and a generous dash of black pepper.

Spiced Parsnips

Add a fresh zing to any table with buttery parsnips lightly spiced with cinnamon and a squeeze of fresh lemon. The traditionally heavy Christmas menu gets a light touch with this wonderfully versatile side, the perfect accompaniment to any roast. These sweet and salty parsnips will have the whole family hooked on the mighty root vegetable. Make a little extra for a vibrant parsnip mash, perfect with pancetta and cranberry stuffing meatballs.

Roasted Vegetable Tart

One of our very favourite recipes, this rich vegetable tart shows how to roast parsnips and other seasonal vegetables into a showstopping main. Simply roast up your vegetables with a sachet of Mediterranean Roasted Vegetables blend, packed with herbs and spices for a chargrilled flavour sensation. With a crumbly shortcrust pastry base and nutty parmesan, this roasted vegetable tart will seriously impress your guests.
