A mild coconut rice flavoured with Bay Leaves and Caraway Seed.
  • 225 gram (8 ounce) basmati rice

  • 100 gram (4 ounce) creamed coconut

  • ½ teaspoon Sea Salt

  • 1 Bay Leaves

  • 1 teaspoon Caraway Seeds

  • 1 Rinse the rice thoroughly in cold running water. Place in a large pan of boiling water with the Salt, Caraway Seeds, Bay Leaf and creamed coconut.
  • 2 Cook, uncovered, for 12-14 minutes or until the rice is tender.
  • 3 Drain and rinse in a sieve with boiling water before serving. A mild accompaniment to Asian dishes.
  • 4 Serve with lemon wedges and garnish with chilli.
