Special Christmas Pancakes

Why have a boring old round pancake when you can have a Christmas tree or a snowflake? All you need is Christmas shaped cookie cutters. You can make classic pancakes or if you are in the mood for something a little lighter, try this healthier recipe, with Schwartz Ground Cinnamon to give the pancakes a wonderful hit of Christmas warmth and flavour.

Cinnamon christmas pancakes

• 2 eggs
• 2 tablespoon of agave syrup
• 75 grams (3 ounces) plain yogurt
• 125 grams (5 ounces) whole wheat flour
• 1 teaspoon Schwartz Ground Cinnamon
• 1 teaspoon of yeast
• 75 millilitres (3 fluid ounces) milk
• 1 pinch of salt
• Butter

To serve :
• fresh fruit
• maple syrup

Preparation

Mix the egg yolks, agave syrup and yoghurt. Add the flour, Cinnamon and yeast. Gradually stir in
the milk. 

In a separate bowl, beat the egg whites until stiff with the salt. Gently add them to the dough.

Put a cookie cutter of your favourite shape into a hot buttered frying pan.

Pour a ladle of dough into it and cook until bubbles appear. Turn the pancake over and let the other side cook. When the pancake is a golden brown, remove from heat onto a plate. Continue until the dough is all gone!

Serve hot pancakes with fresh fruit and maple syrup.
