Beef & Apricot Curry
Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Heat the oil in a frying pan and fry the steak and onions for 2-3 minutes, until browned. Add the Curry Powder and fry for another minute, stirring. Stir in the stock, peanut butter and Salt. Bring to the boil then transfer to a casserole dish.
Cover and cook for 1½ hours, stirring in the apricots and creamed coconut 15 minutes before the end of cooking time.
Serve with boiled basmati rice, seasoned with Schwartz Pilau Rice Seasoning to make a great Indian meal.
