Coq au Vin

Coq au Vin is a classc French chicken dish including tomatoes, red wine and herbs.
  • 1 tablespoons olive oil

  • 1 onion, sliced

  • 175 gram (6 ounce) lean bacon, sliced

  • 4 skinless chicken breasts

  • 1 sachet Coq au Vin Recipe Mix

  • 300 millilitre (½ pint) water

  • 125 gram (5 ounce) baby button mushrooms

  • 1 Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
  • 2 Heat the oil and fry the onion and bacon for 3-4 minutes in a frying pan, until browned. Add the chicken and fry for a further 3-4 minutes, turning occasionally. Drain excess liquid. Transfer to a casserole dish and add mushrooms.
  • 3 Mix sachet contents with the water and add to the casserole dish. Cover and cook for 1 hour, or until chicken is cooked.
  • 4 Serve with crispy roast potatoes.
