Coq au Vin is a classc French chicken dish including tomatoes, red wine and herbs.
Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
Heat the oil and fry the onion and bacon for 3-4 minutes in a frying pan, until browned. Add the chicken and fry for a further 3-4 minutes, turning occasionally. Drain excess liquid. Transfer to a casserole dish and add mushrooms.
Mix sachet contents with the water and add to the casserole dish. Cover and cook for 1 hour, or until chicken is cooked.
Serve with crispy roast potatoes.
