Ingredients: 1 litre good quality liquid chicken stock (or bone broth); 500 ml (17 fl ozs) water; 1 tbsp sesame oil; 4 garlic cloves, finely grated; 1 thumb sized piece of ginger, finely grated; 1 chilli, finely chopped; 2 tbsp soy sauce; 1 tbsp rice vinegar; 1 tbsp honey; 2 star anise whole; 6 skinless chicken thighs, skinless and boneless; 3 pak choi, finely sliced (separated into stems and leaves); 200 g (7 oz) rice noodles; 4 Spring onions, sliced; 2 fresh limes; Fresh coriander (optional); 2 tsp tbsp crispy chilli oil (optional)
