Braised Red Cabbage

2 tablespoons oil

1 medium onion, sliced

1 tablespoons soft brown sugar

1 large cooking apple, peeled and sliced

½ red cabbage, finely sliced

1 tablespoons cider vinegar

6 Juniper Berries , , lightly crushed

25 gram (1 ounce) sultanas

Ground Black Pepper , to season

Instructions
- 1 Heat the oil and fry the onion until soft.
- 2 Add the sugar and apple and fry for another 2-3 minutes.
- 3 Stir in the red cabbage, vinegar, Juniper Berries, Bay Leaves and sultanas. Cover and simmer gently for 45 minutes, stirring occasionally.
- 4 Season with Salt and Pepper. Remove the Bay Leaves and serve.
