There are many variations of this terrific trimming, but we love how tart cooking apples and sweet brown sugar give this recipe a beautifully balanced flavour. The addition of juniper berries, bay leaves and ground black pepper blend together perfectly to ensure a distinctly festive flavour that also goes great in post-Christmas turkey sandwiches!
  • 2 tablespoons oil

  • 1 medium onion, sliced

  • 1 tablespoons soft brown sugar

  • 1 large cooking apple, peeled and sliced

  • ½ red cabbage, finely sliced

  • 1 tablespoons cider vinegar

  • 6 Juniper Berries , , lightly crushed

  • 2 Bay Leaves

  • 25 gram (1 ounce) sultanas

  • Ground Black Pepper , to season


  • 1 Heat the oil and fry the onion until soft.
  • 2 Add the sugar and apple and fry for another 2-3 minutes.
  • 3 Stir in the red cabbage, vinegar, Juniper Berries, Bay Leaves and sultanas. Cover and simmer gently for 45 minutes, stirring occasionally.
  • 4 Season with Salt and Pepper. Remove the Bay Leaves and serve.
