Broccoli Fritters with Garlic Yoghurt Dip
Broccoli packed fritters make for a healthy Spring vegetarian lunch.
Makes 8 fritters
250 grams (9 ounces) broccoli florets, finely chopped
1 spring onion, sliced
2 medium free-range eggs, beaten
½ tablespoon Garlic Granules
½ teaspoon Sea Salt Adjustable Grinder Mill
½ teaspoon Black Peppercorn Grinder
85 grams (3 ounces) plain flour
2 tablespoons vegetable oil
125 grams (4.5 ounces) Greek yoghurt
1 tablespoon lemon juice
1 teaspoon Garlic Granules
Salt and black pepper to taste
- 1 Place the broccoli, spring onion, eggs, Schwartz Garlic Granules, salt and pepper into a bowl and mix to combine. Add the flour and mix to create a batter.
- 2 Heat the oil in a non-stick frying pan. Place large tablespoons of the mixture into the pan and cook for 3-4 minutes on a medium heat. Flip the fritters over and cook for a further 3-4 minutes or until cooked through and golden.
- 3 For the garlic yoghurt dip, combine all the ingredients in a bowl and mix.
- 4 Serve the fritters with a dollop of garlic yoghurt dip.
