Freshly roasted Mediterranean vegetables seasoned with Mixed Herbs.
  • 2 red onions, sliced

  • 2 courgettes, thickly sliced

  • 1 red pepper, cut into chunks

  • 1 orange pepper, cut into chunks

  • 2 tablespoons olive oil

  • 2 teaspoon Mixed Herbs

  • 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
  • 2 Place the vegetables in a roasting tin. Drizzle with olive oil and toss to coat all the vegetables. Spread the vegetables out across the tin.
  • 3 Roast for 30-40 minutes until the vegetables are tender. Sprinkle with Mixed Herbs and serve.
