Ingredients
275 gram (10 ounce) potatoes, diced
100 gram (4 ounce) carrots, diced
3 tablespoons oil
1 large onion, chopped
1 teaspoon Turmeric Powder
2 teaspoon Cumin Seeds
2 teaspoon Ground Coriander
Cayenne Chilli Pepper , , a good pinch
2 teaspoon Garlic Granules
100 gram (4 ounce) courgettes, diced
400 gram (14 ounce) tin tomatoes
100 gram (4 ounce) frozen peas
Salt to taste
COOKING INSTRUCTIONS
- 1 Parboil the potatoes and carrots for 10 minutes until just tender. Drain.
- 2 Heat the oil and fry the onion until softened. Add the Spices and fry for another 2 minutes. Stir in the potatoes, carrots, courgettes and tomatoes. Simmer for 10 minutes until tender. Stir in the peas and salt and cook for another 5 minutes before serving.
