Mixed Vegetable Curry
Parboil the potatoes and carrots for 10 minutes until just tender. Drain.
Heat the oil and fry the onion until softened. Add the Spices and fry for another 2 minutes. Stir in the potatoes, carrots, courgettes and tomatoes. Simmer for 10 minutes until tender. Stir in the peas and salt and cook for another 5 minutes before serving.
