A tasty marinade mix with sweet lime, mint and a hint of cayenne chilli pepper.
You will need
1 sachet Schwartz Grill Mates Mojito Lime Marinade Mix
50ml (2fl oz) oil
50ml (2fl oz) white rum
2 tbs white wine vinegar
900g (2lbs) chicken, beef or King prawns
1. Combine sachet contents, oil, rum and vinegar in a small bowl. Set aside 2 tbs marinade for basting. Add meat or prawns to bowl and turn to coat well.
2. Cover and leave to marinate for 15 minutes, or for best results refrigerate and marinate overnight (marinate seafood no longer than 30 minutes). Remove from marinade and discard any remaining marinade.
3. BBQ, grill or bake until cooked through, basting with reserved marinade half-way through cooking. Discard any remaining marinade.
Why not try…
Making a delicious tasty salmon burgers. Place 675g (1½ lb) salmon fillets, 1 sachet Grill Mates Mojito Lime Marinade Mix, 1 small onion and 50g (2oz) fresh bread crumbs in a food processor. Pulse until coarsely chopped, combine all the ingredients to form 6 equal size burgers. Cover and refrigerate the burgers for 1 hour to firm up. Brush with oil before cooking on the BBQ for 4-5 minutes on each side, or until cooked through. Serve with lime wedges.
Or create a Honey Lime Marinade by combining sachet contents with 50ml (2fl oz) oil, 50ml (2fl oz) lime juice and 2 tbs honey. Marinate as above.
