Ingredients
50 gram (2 ounce) butter, softened
100 gram (4 ounce) plain flour
Sea Salt, to season
50 gram (2 ounce) Cheddar cheese, grated
1 medium egg, separated
¾ teaspoon Cayenne Chilli Pepper
150 millilitre (¼ pint) soured cream
3 tablespoons mayonnaise
COOKING INSTRUCTIONS
- 1 Pre-heat oven to 230°C, 450°F, Gas Mark 8.
- 2 Rub the butter, flour and Salt together until it resembles breadcrumbs. Mix in the cheese, egg yolk and ½ tsp Cayenne Pepper until a soft dough.
- 3 Roll out to a square approx 1cm (½") thick. Cut into thin strips.
- 4 Place on a greased baking tray. Brush with egg white. Bake for 10-15 minutes.
- 5 Mix cream and mayonnaise with ¼ tsp Cayenne for the dip.
