  • 50 gram (2 ounce) butter, softened

  • 100 gram (4 ounce) plain flour

  • Sea Salt, to season

  • 50 gram (2 ounce) Cheddar cheese, grated

  • 1 medium egg, separated

  • ¾ teaspoon Cayenne Chilli Pepper

  • 150 millilitre (¼ pint) soured cream

  • 3 tablespoons mayonnaise

Instructions

  • 1 Pre-heat oven to 230°C, 450°F, Gas Mark 8.
  • 2 Rub the butter, flour and Salt together until it resembles breadcrumbs. Mix in the cheese, egg yolk and ½ tsp Cayenne Pepper until a soft dough.
  • 3 Roll out to a square approx 1cm (½") thick. Cut into thin strips.
  • 4 Place on a greased baking tray. Brush with egg white. Bake for 10-15 minutes.
  • 5 Mix cream and mayonnaise with ¼ tsp Cayenne for the dip.
