  • Pre-heat the oven to 230°C, 450°F, Gas Mark 8.

  • Rub the fats into the flour until the mixture is crumbly. Stir in the cheese and Seasonings. Add the egg yolk and enough cold water to form a dough.

  • Roll out the cheese pastry. Cut into thin strips and place them on to a greased baking tray. Brush with egg white. Bake in the oven for 10 minutes.

  • Cheese sticks may be frozen for up to 6 months. Thaw them at room temperature, or heat them in a warm oven from frozen.
