Chilli Con Carne & Rice
2 teaspoon rapeseed oil
450 gram (1 pound) extra lean beef mince
1 large onion, finely chopped
1 green pepper, deseeded and chopped
1 teaspoon Garlic Salt
½ -1 teaspoon Hot Chilli Powder
½ teaspoon Ground Cumin
400 gram tin chopped tomatoes
2 tablespoons tomato purée
400 gram tin red kidney beans, drained and rinsed
250 gram (9 ounce) brown rice
Ground Black Pepper , to season
- 1 Heat oil and brown mince for 4-5 minutes. Add the onions, green pepper, garlic, chilli powder, cumin and cook for another 2-3 minutes.
- 2 Add the remaining ingredients (except the rice). Bring the sauce to the boil, then lower the heat, cover and simmer gently for 15-20 minutes.
- 3 Meanwhile, cook the rice according to the packet instructions.
- 4 Season the chilli with Ground Black pepper to taste. Serve with boiled rice.
