  • 2 tablespoons cornflour

  • 3 teaspoon Thai 7 Spice

  • 450 gram (12 ounce) boneless, skinless chicken breasts, cut into strips

  • 1 tablespoons oil

  • 1 red pepper, sliced

  • 100 gram (4 ounce) mangetout

  • For the noodles:

  • 175 gram (6 ounce) noodles

  • 1 teaspoon cornflour

  • 3 teaspoon Thai 7 Spice

  • 2 tablespoons dark soy sauce

  • 2 tablespoons lemon juice

  • 1 teaspoon soft brown sugar

  • 1 tablespoons tomato purée

  • 225 gram (8 ounce) tin bamboo shoots, drained and rinsed

  • 75 millilitre (3 fluid ounce) water

Instructions

  • 1 Mix together the cornflour and Perfect Shake Thai 7 Spice Special Blend and toss in the chicken, coating evenly. Heat the oil in a frying pan and fry the chicken for 4-5 minutes until golden. Add the pepper and mangetout and fry for a further 1-2 minutes.
  • 2 Meanwhile, cook the noodles according to the pack instructions. Drain.
  • 3 Blend the cornflour, Perfect Shake Thai 7 Spice Special Blend, soy sauce, lemon juice, sugar, tomato purée and water in a saucepan, bring to the boil, stirring until thickened. Stir in the bamboo shoots and noodles. Toss the chicken and noodles together.
