Lemon and Thyme Chicken Salad

2 tablespoon Lemon & Thyme Seasoning

450 gram (1 pound) mini chicken fillets

1 tablespoon oil

175 gram (6 ounce) mixed leaved

100 gram (4 ounce) tomatoes, sliced

1 red onion, diced

100 gram (4 ounce) feta cheese, crumbled

2 tablespoon extra virgin olive oil

1 tablespoon white wine vinegar

1/2 teaspoon Lemon & Thyme Seasoning

Instructions
- 1 In a large bowl sprinkle the Chicken Seasoning over the chicken, turning to coat all over.
- 2 Heat the oil in a large frying pan over a medium heat. Add chicken and cook for 10 minutes, or until cooked through. Allow chicken to cool slightly then cut fillets lengthwise in half.
- 3 Place the lettuce into a large bowl. Mix the chicken with the tomatoes, cucumber and onion. Place chicken and salad mixture on top of the lettuce and crumble the feta over.
- 4 In a small bowl whisk the olive oil, vinegar and lemon & thyme chicken seasoning.
- 5 Drizzle the salad dressing all over the salad and serve.
