A delicious fresh and zingy lemon and thyme salad for the family to enjoy.
In a large bowl sprinkle the Chicken Seasoning over the chicken, turning to coat all over.
Heat the oil in a large frying pan over a medium heat. Add chicken and cook for 10 minutes, or until cooked through. Allow chicken to cool slightly then cut fillets lengthwise in half.
Place the lettuce into a large bowl. Mix the chicken with the tomatoes, cucumber and onion. Place chicken and salad mixture on top of the lettuce and crumble the feta over.
In a small bowl whisk the olive oil, vinegar and lemon & thyme chicken seasoning.
Drizzle the salad dressing all over the salad and serve.
