Lemon and Thyme Chicken Salad

A delicious fresh and zingy lemon and thyme salad for the family to enjoy.
  • 2 tablespoon Lemon & Thyme Seasoning

  • 450 gram (1 pound) mini chicken fillets

  • 1 tablespoon oil

  • 175 gram (6 ounce) mixed leaved

  • 100 gram (4 ounce) tomatoes, sliced

  • 1 red onion, diced

  • 100 gram (4 ounce) feta cheese, crumbled

  • 2 tablespoon extra virgin olive oil

  • 1 tablespoon white wine vinegar

  • 1/2 teaspoon Lemon & Thyme Seasoning

Cooking tip
  1. Why not try replacing the chicken with salmon fillets.


  • 1 In a large bowl sprinkle the Chicken Seasoning over the chicken, turning to coat all over.
  • 2 Heat the oil in a large frying pan over a medium heat. Add chicken and cook for 10 minutes, or until cooked through. Allow chicken to cool slightly then cut fillets lengthwise in half.
  • 3 Place the lettuce into a large bowl. Mix the chicken with the tomatoes, cucumber and onion. Place chicken and salad mixture on top of the lettuce and crumble the feta over.
  • 4 In a small bowl whisk the olive oil, vinegar and lemon & thyme chicken seasoning.
  • 5 Drizzle the salad dressing all over the salad and serve.
