Southern Fried Chicken with Slaw

  • Southern Fried Chicken: Preheat oven to 180˚C, 350°F, Gas Mark 4.

  • Mix the Southern Fried Seasoning with the oil in a large bowl. Add the chicken drumsticks and coat well.

  • Place the chicken drumsticks onto a baking tray, and cook for 45 minutes, or until chicken is cooked through.

  • Slaw: Meanwhile, cook the corn in boiling salted water for 5-6 minutes or until tender.

  • Whisk together the mayonnaise, vinegar, mustard, salt and pepper. Toss the cabbage, carrots, spring onions with dressing until well coated.

  • Serve the chicken with the slaw and corn.

Cooking tip

Substitute chicken drumsticks with bone-in thighs or breast.
