Southern Fried Chicken: Preheat oven to 200˚C, 180°C fan, Gas Mark 6.
Whisk together 1 tbsp of the Southern Fried Chicken Seasoning and 50ml water. Toss the drumsticks in the mixture. Cover and marinate for 5 minutes.
Meanwhile, sprinkle the remaining Southern Fried Chicken Seasoning into a shallow bowl. Toss the marinated drumsticks in the seasoning, until evenly coated.
Heat the oil in a large skillet set over a medium heat. Shallow-fry the chicken for 5 to 6 minutes, or until browned all over. Transfer to a parchment paper-lined baking tray. Bake for 15 to 20 minutes or until the juices run clear and the chicken is cooked through.
Slaw: Meanwhile, cook the corn in boiling salted water for 5 to 6 minutes or until tender.
Whisk together the mayonnaise, vinegar, mustard, salt and pepper. Toss the cabbage, carrots, spring onions with dressing until well coated.
Serve the chicken with the slaw and corn.
Substitute chicken drumsticks with bone-in thighs or breast.
