Southern Fried Chicken with Slaw

  • Southern Fried Chicken: Preheat oven to 200˚C, 180°C fan, Gas Mark 6.

  • Whisk together 1 tbsp of the Southern Fried Chicken Seasoning and 50ml water. Toss the drumsticks in the mixture. Cover and marinate for 5 minutes.

  • Meanwhile, sprinkle the remaining Southern Fried Chicken Seasoning into a shallow bowl. Toss the marinated drumsticks in the seasoning, until evenly coated.

  • Heat the oil in a large skillet set over a medium heat. Shallow-fry the chicken for 5 to 6 minutes, or until browned all over. Transfer to a parchment paper-lined baking tray. Bake for 15 to 20 minutes or until the juices run clear and the chicken is cooked through.

  • Slaw: Meanwhile, cook the corn in boiling salted water for 5 to 6 minutes or until tender.

  • Whisk together the mayonnaise, vinegar, mustard, salt and pepper. Toss the cabbage, carrots, spring onions with dressing until well coated.

  • Serve the chicken with the slaw and corn.

Cooking tip

Substitute chicken drumsticks with bone-in thighs or breast.
