Southern Fried Chicken: Preheat oven to 180˚C, 350°F, Gas Mark 4.
Mix the Southern Fried Seasoning with the oil in a large bowl. Add the chicken drumsticks and coat well.
Place the chicken drumsticks onto a baking tray, and cook for 45 minutes, or until chicken is cooked through.
Slaw: Meanwhile, cook the corn in boiling salted water for 5-6 minutes or until tender.
Whisk together the mayonnaise, vinegar, mustard, salt and pepper. Toss the cabbage, carrots, spring onions with dressing until well coated.
Serve the chicken with the slaw and corn.
Substitute chicken drumsticks with bone-in thighs or breast.
