This recipe is a deliciously simple way of serving salmon with a spicy twist, simply marinade the salmon in lime juice and Curry Powder and bake in the oven. Delicious served with a tomato and cucumber relish and basmati rice.
  • 4 salmon fillets

  • Marinade:

  • 2 tablespoons oil

  • Juice of 1 lime

  • 4 teaspoon Hot Curry Powder

  • 1 Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
  • 2 Mix all the marinade ingredients together in a large bowl. Add the salmon and gently coat the fish.
  • 3 Cover and chill for 30 minutes.
  • 4 Place on a baking tray and bake in the oven for 15-20 minutes, until cooked through.
